Résumé

From the late antiquity village of El Castillón (Santa Eulalia de Tábara, Zamora), some considerable faunal archaeological remains (mostly domestics, but wilds too), dated from the centuries V and VI A.D. have been recovered. Among the identified fowl’s bones, it is noticed a predominance of poultries. In this communication it is presented the archaeozoologist study of galliform remains (Gallus gallus), recovered from the different site surveys. The taphonomic study of the remains indicates the conscious alimentary consumption of the different portions of the animal by the inhabitants of the village, as well as a feasible operational chain for the meat process.
